Glace à l'azote liquide

Alors que mes recherches de "recettes fooding" commencent à aboutir, pour vous faire patienter, je partage avec vous cet article très complet en anglais sur l'excellent blog de cuisine 101 Cookbooks et notamment illustré par cette superbe photo que je me permets de reprendre ici.

Au programme : recette et tour de main pour une petit crème glacée à l'azote liquide ainsi que des tonnes de liens très intéressants vers d'autres sites traitant du procédé ou de la cuisine moléculaire !

Au fait... Ca s'achète où et ça se conserve comme l'azote liquide ? Quelqu'un a une idée ?

donc, combien le litre d'azote liquide? et combien il faut compter pour un recipient cryogene fiable de 5L?

pour vous parler de la precausion si vous metter la main dans l'azote (pas lomptemps) cela ne sera pas tresdangereux certe il est a -200 degres mais notre température la fait s'evaporer automatiquement ce qui veux dire que ce que l'on touche n'est pas de l'azote liquide mais a l'etat gazeux bien sure sa refroidit quand meme et au bout de 5 minutes plus de doigts ^^ en plus c'est tellement froid que l'on ne s'en rend pas compte xd

je prépare un TPE moi aussi au sujet de la gastronomie moléculaire et nous cherchons des idées d'expériences . nous avons cependant nous avons pensé en présenter une avec de l'azote liquide et je voudrais savoir où m'en proccurer et à quel prix ?? Comment le conserver ? merci , par avance, de vos réponses !
